How long does a steak take to reach each level of doneness on the infrared grill? Four equally thick rump steaks, straight from the fridge, compared from Medium Rare to Well Done. Of course, this is just a rough guideline.

Preparation
Step 1: Place directly from the fridge
The steaks go on the grill without tempering, so with about 4 °C in the core.
Step 2: Turn for the pattern
Turn briefly by 45 degrees in between, this creates the checkerboard pattern.
Step 3: Flip
Turn after 5 minutes (core temperature then about 32 °C). For higher doneness levels, turn only after 6, 7, or 8 minutes.
Step 4: Grill the second side for the same amount of time
After a total of 10 minutes: just under 54 °C (Medium Rare). After 12 minutes: 56 °C (Medium). After 14 minutes: 62 °C (Medium Well). After 16 minutes: just under 72 °C (Well Done).
Step 5: Let it rest briefly
During resting, the core temperature will rise by about 1–2 °C.
